Breakfast idea: Scrambled Egg, Smoked Salmon and Avocado

Morning everyone! I love having this for breakfast and as a light lunch. It's such a nice alternative to a Full English or fried egg on toast sort of thing. I won't go into detail as to how I did it because its pretty self explanatory. I used brown whole wheat and seed bread, mashed the avocado on top, cooked up the scrambled egg and finished with smoked salmon and lemon.


This dish has so many nutritional benefits. Avocado is amazing for your skin and although its high in calories and fats these are healthy fats and omega 3 which are really important in a healthy diet. Research has also shown that avocados are good for brain function, a healthy heart, blood pressure and anti-aging. Eggs contain protein and essential amino acids, they have also been shown to prevent the development of cataracts and prevent muscle degeneration. Although filling this is actually really light. If you don't like fish, don't worry swap avocado for bacon.
